Ingredients; (3-4 people)
* 4 large potatoes, 1 sweet potato
* 3 large cucumber or 3 zucchini
* one small onion, 2 cloves of garlic
* cumin, nutmeg, salt, black pepper and for the zucchini sauce smoked paprika and tomato concentrate
* little bit of white wine, oil
PREPARATION;
1. Peel the potatoes and cut them to small pieces. Put them in large saucepan and cover with boiling water. Salt the water by feeling. Cook them for 20-25 minutes
2. Meanwhile for the CUCUMBER SAUCE –
-peel the cucumbers and shred them to a colander so the water can drain
-cut the onion to small pieces put it in to a pan big enough to contain cucumbers, smash 2 cloves of garlic in it as well
-add some veggie oil and sauté for 5-8 minutes
-add some white wine and wait till it’s almost gone
-add cucumbers, salt, pepper, cumin, nutmeg and cook for 15 minutes
– if the sauce is not thick enough, use some flour mixed with water as a thickener
3. ZUCCHINI SAUCE – everything is the same, instead of cucumbers you add shredded zucchini (you don’t need to peel them). When you add them you also add smoked paprika, tomato concentrate, salt, pepper, cumin, nutmeg and cook for 15 minutes
These two sauces are completely different, but very good with the mashed potatoes.
4. Drain the water from potatoes, a it more salt, add veggie butter and rice milk and smash or use hand blender. Mashed potatoes are delicious, you can make any kind of mash (carrot + sweet potato, cauliflower, etc)
