QUINOA & BUCKWHEAT SALAD WITH BUTTERNUT SQUASH, PINENUTS AND GOAT’S CHEESE

YOGURT WITH FRESH FRUIT AND REHYDRATED SEEDS/OATS

 

This is new for me. Our breakfast in Slovenia was always more of a whole content meal than a snack or something healthy. Even as vegetarian I always loved baked panini sandwiches, toasts, organic home raised eggs, after that some marmalade and a coffee or a smoothie – usually both. But last year being here in England and starting to listening to my body (when it needs food and how much) I came out of my eating habits quite a lot. Especially portion wise. I tend to eat a lot less than a year ago. And this fresh breakfast recipe inspired by some of ingredients that I present to principals at my work for their everyday English breakfast. 

 

Ingredients for 2 persons:

* 0,5l Yogurt (organic yogurt or vegan soy/coco based yogurt)
* 1 cup of blueberries (get them organic if you can)
* 1 cup of raspberries (organic or home grown)
* 2 tablespoons of pine nuts
* 2 tablespoons of chia seeds
* 1 tablespoon of linseeds
* 1 tablespoon of pumpkin seeds
* 1 cup of oats
* 2 tablespoon of organic honey (for vegans home made dandelion flower honey)
* 130ml of organic milk or dairy free milk

 

PREPARATION;

1. In a medium bowl combine oats, chia seeds, linseeds and pumpkin seeds and pour over 130ml of – I’m using hazelnut milk (you can use organic milk or other dairy free alternatives as oats, rice, soy milk). Leave to soak for 30 min. You can make this in advance and put it in a fridge. 

2. Roast the pine nuts in a small pan. 

3. Put the yogurt out of the container and divide it to two bowls. Make a little well in the middle. Add 3 tablespoons of rehydrated oats/seeds in the “center of a well”. Thinly pour some honey or maple syrup over (1 teaspoon). Repeat in the other bowl. 

4. Divide the blueberries and raspberries equally over the yogurt and oats/seeds.  Sprinkle with pine nuts and 1-2 teaspoons of honey or maple syrup. 

This is a healthy breakfast filled with lots of nutrients and will fill you for quite some hours. It feels very fresh and deep with flavor of a forest goodness. And it also looks pretty. Feel free to add different fruit and seeds, and do experiment with how you put the ingredients together to achieve art like masterpieces.   😉
